It’s been a while since I posted about my Banting journey. I basically eat the same thing so it would seem boring if I wrote about the same thing repeatedly. My oven is getting fixed today and hopefully I’ll be able to make better meals , can’t wait!
Out of boredom and an inner craving fight of having popcorn I decided to make a shake. I bought strawberries for R20 yesterday and I already had the other ingredients on hand. I hope next time I’ll add coconut oil or butter just to increase the healthy fat content . I didn’t add any sweetener because I find they stall my weight loss goals. August is the last month of winter in South Africa and I’m hoping to do a challenge which shows my weekly weigh ins. I hate scales but I’ll do it for my instagram followers who believe in seeing. We’ll see 🙂
Vacation work was a great experience for me last week. My working hours were 8am to 5 pm. Thank God the clients location I was placed at is 15 mins away from my home. I’d wake up at 6am and leave at 740am. I’m blessed to have 3 younger siblings so one of them would wake up and pack my lunch as per my instructions. She really impressed me and she’s definitely getting a reward when I get paid.
Lunch and snack on Wednesday
The above meal consisted of Caulirice ,stewed sausage and an avocado half. This was a basic meal made from dinner leftovers . The bad thing about this packed lunch is that by lunchtime my avocado had turned brown. How do you keep your avocado in the lunch box fresh? I even tried a zip lock bag but the effect was the same as the lunchbox packaging. Do not forget to remove the avocado from the box when reheating otherwise you’ll have cooked avo and who eats cooked fruit ? 🤣 Yes avocado is fruit👌😂😬
Dinner on Thursday
I don’t understand when people say they don’t have time to make lunch for work. This lunch was packed Thursday night as I dished out dinner. I just took it from the fridge in the morning. The lunch consisted of leftovers i.e. Grilled Chicken and steamed vegetables. I added the avocado half in the morning.
Other simple lunch box ideas and snacks you can try are :
I discovered something recently. Grated caulirice if not frozen smells awfully. I usually keep the veggies in the freezer e.g. Carrots . I usually grate the cauliflower just before I cook it . Below is a picture of how I prepped my cauliflower last Monday.
I stacked my Prepped vegetables in the fridge and after an hour when I opened it there was a bad strong smell in there. The culprit after a thorough search was caulirice. The best way I then figured is to store the caulirice in the freezer. Ziplock bags aren’t expensive and can be reused till worn out. How do you store your frozen veggies . Let me know 😌
I follow a lot of fitness and health experts on social media and I’ve been inspired to prep for the week. I’m generally free on Mondays so I use that day for this task. I stay close to varsity but I’m on my semester break so I’m home for the next few weeks and the struggle is real. I’m the only banter in the family so for every carb I prepare for them, I have to make a low carb alternative for myself. I make my life easier by just swooping the carbs.
Everything else here is Banting friendly that is the protein and vegetables. The oil available here however is canola oil and a mix of olive and sunflower oil. Both not Banting friendly. Imagine my excitement when I found salted butter in the fridge 😉. Check out my veggie prep for the week .

I’d never eat boiled cauliflower since I was a kid, makes it so bland and tastes awful. I’ve realized that one way to get even adults to eat vegetables is to prepare them in an exciting way e.g. Cauliflower can also be used to make cauliwraps, caulimash,pizza bases and bread.
Cauliflower is known for its high anti-inflammatory characteristic and its low in carbs. Banters and people who follow a low carb lifestyle have resorted to making this as one of the staples . I’m a DIY kind of person and buying caulirice is not for my student budget . However if you don’t have time and don’t mind spending you can get it at Woolworths or Checkers and many other grocery stores.
For the the low budget banters like myself, here is a quick way of making caulirice. This is so low budget it even includes a hand-held one sided grater . If you have a food processor it also does the job perfectly. Just pulse it until it has a rice look /texture.
All you’ll need
And you’ll get this 😍😍😍😍
1.Use plastic bags and place the riced cauliflower into each plasthc bag.
2.Press air out of bag.
3.Tie it or seal it.
When you need it, defrost it and fry it in butter or whichever healthy oil you use to cook . Other people add onions and peppers to make it taste even better. Make some and tell me how it goes.
