I follow a lot of fitness and health experts on social media and I’ve been inspired to prep for the week. I’m generally free on Mondays so I use that day for this task. I stay close to varsity but I’m on my semester break so I’m home for the next few weeks and the struggle is real. I’m the only banter in the family so for every carb I prepare for them, I have to make a low carb alternative for myself. I make my life easier by just swooping the carbs.
Everything else here is Banting friendly that is the protein and vegetables. The oil available here however is canola oil and a mix of olive and sunflower oil. Both not Banting friendly. Imagine my excitement when I found salted butter in the fridge 😉. Check out my veggie prep for the week .

“What is that white thing on your plate “, or ” why do you eat cauliflower like that instead of just boiling it “-These are the two most frequent questions I’ve heard when I feature this yummy staple in my IG posts. I’d never eat boiled cauliflower since I was a kid, makes it so bland and tastes awful. I’ve realized that one way to get even adults to eat vegetables is to prepare them in an exciting way e.g. Cauliflower can also be used to make cauliwraps, caulimash,pizza bases and bread.
Cauliflower is known for its high anti-inflammatory characteristic and its low in carbs. Banters and people who follow a low carb lifestyle have resorted to making this as one of the staples . I’m a DIY kind of person and buying caulirice is not for my student budget . However if you don’t have time and don’t mind spending you can get it at Woolworths or Checkers and many other grocery stores.
For the the low budget banters like myself, here is a quick way of making caulirice. This is so low budget it even includes a hand-held one sided grater . If you have a food processor it also does the job perfectly. Just pulse it until it has a rice look /texture.
All you’ll need
And you’ll get this 😍😍😍😍
1.Use plastic bags and place the riced cauliflower into each plasthc bag.
2.Press air out of bag.
3.Tie it or seal it.
When you need it, defrost it and fry it in butter or whichever healthy oil you use to cook . Other people add onions and peppers to make it taste even better. Make some and tell me how it goes. The term challenge seems to suggest that after completion it’s back to “normal” unhealthy eating habits. Noooo, that’s not the case. I decided to name it a challenge just to condition my mind into accepting that it’s not going to be easy , brace yourself. I had very rough days, some days the cravings hit me like no mans business. I unfortunately decided to include orange list items which we’re only supposed to have occasionally, regularly. 🙈.I’ll never get rid of the cravings using this method. I’d like to go on a green list only challenge (so help me God).
The meal included this yummy beef sausage, avocado and cauliflower rice and tomato combo😍😍😍. I wish I could eat like this everyday!!! Funny thing is for the first time ever since beginning this low carb lifestyle, I had my first “one meal a day” day. I must say I felt great, no hunger pangs and I even went to the gym and lifted some weights. I think the avo played a big part in this satiating meal.

I believe in cooking in bulk AKA meal prepping so I made a lot of sausages and I had the leftovers today. My morning after the challenge consisted of the sausage, an omelette and a palmful of olives.

This challenge taught me self control although on some days I did poorly 🙈🙈🙈🙈. The point is to get back on the wagon and stay on it. No matter how badly or number of times you fall, get back on the wagon. Remember it’s a Lifestyle, 31 days is not enough!!!
Shakshouka is a dish that has recently found fame on instagram – it is posted almost as frequently as the perennial avocado toast and you are unlikely to scroll down your feed on a Sunday (brunching day) without it popping up. The recipe originates from the middle east and it consists of eggs that are poached in a spiced tomato sauce. Other ingredients are often combined into the sauce such as meats or beans but this varies from region to region.
I have added sausage meatballs and sweet potato to this shakshouka recipe and suggested an optional sprinkling of coriander to top it all off. For me coriander is never optional – I love it and can not get enough of it: if you are not a fan however then any fresh herb would be a wonderful substitute. Coriander is definitely the marmite…
I opened this blog in April 2013 but I didn’t have anything to write about. Zero motivation.Hopefully this time I’ll get up to some good writing and clear up my mind.My focus will mainly be on healthy eating, fitness and a few miscellaneous topics. Loved this meal!!! One egg because presentation purposes , I had 2 🍳🍳. There’s nothing complicated here. Meal includes fried liver in onion and pepper, green pepper ring with an egg , 2 fried tomato slices and a 1/4 avocado 😋😋😋😋! Try it and let me know what you think!

I must admit though that I was tempted to add a slice of brown toast with butter to this meal!!! I don’t know what to blame the cravings on. The weather maybe or it’s this exam stress. I’ve been asking myself this question though, this is a Low carb diet not a NO carb diet so why can’t I have a slice of toast which is less that 25 grams bet carbs everyday. I think life would be great if I could 😭
Leanne Vogel of Healthful pursuit Talks about carb up days especially for women because of hormones and their stability. After exams I’m going to dig deep into this site and possibly buy the book on amazon so I can fully understand the carb up days she talks about.
